Drizzle the chicken thighs with a little oil and generously coat with Blow My Coals seasoning.
In a casserole dish over medium-high heat, sear the thighs for 1-2 minutes per side until golden brown.
Add water, soy sauce, Gotcha Good, and honey to the dish, stirring well to combine. Cover with a lid and bake at 180°C fan bake for one hour. If preferred, turn the oven off halfway through and let the chicken continue to tenderize in the residual heat for fall-apart perfection.
Remove from the oven, carefully lift the thighs out of the sauce, and shred or roughly chop. Set aside.
Mix cornflour with a little water, then stir it into the sauce. Place the casserole dish back on the stove over medium heat, whisking until the sauce thickens and turns glossy—this should take just a minute. Return the chicken to the sauce, coating it thoroughly.
Serve over steamed rice, topped with mayonnaise and fresh vegetables, and enjoy this flavour-packed, melt-in-your-mouth chicken!
