Instructions:

Preheat your oven to 200°C (fan 180°C). Line a baking tray with baking paper.

Prepare the dates by slicing them open lengthwise without cutting all the way through. Remove and discard the pits. Fill each date with goat cheese, gently pressing to close.

Wrap each date with a strip of bacon and place them seam-side down on the prepared baking tray. Repeat for all remaining dates.

In a small bowl, mix together the honey, chopped rosemary, cayenne pepper, and a pinch of salt and black pepper. Drizzle half of the honey mixture evenly over the dates, coating the bacon to help it caramelise in the oven.

Bake for 20–25 minutes, or until the bacon is golden and crisp.

Serve warm or at room temperature, drizzled with the remaining honey mixture. Sprinkle with walnuts if desired.
