Roast Lamb Leg

Ingredients

  • Lamb Leg Whole (2-2.2kg)
  • 1/2 tablespoon olive oil 
  • 2 garlic cloves, minced 
  • 1/2 tablespoon dijon mustard 
  • 1/2 tablespoon each of rosemary and thyme, finely chopped 
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper 

 

 

Method:

Preheat your oven to 180°C and line a roasting dish with foil.

Pat the lamb dry using paper towels, then lightly score the fleshy side with shallow cuts.

In a small bowl, mix together the remaining ingredients. Rub the mixture all over the lamb, making sure to work it into the scored lines.

Place the lamb in the prepared dish, thick side facing up, and roast for 1 hour and 20 minutes. Once cooked, let it rest for 15 minutes before serving.
