Ingredients
500g Premuim Beef Mince
1 Tbspn olive oil
1 onion diced
3 cloves garlic minced
1 red chilli finely chopped
½ tsp smoked paprika
1 tsp ground cumin
½ tsp chipotle powder
½ tsp chilli powder
1 tsp ground coriander
½ tsp salt
¼ tsp pepper
1 Tbspn chopped fresh oregano
1 Tbspn tomato paste
1 tin kidney beans drained
1 packet of tortilla chips
2 cups grated cheddar
1 avocado sliced or mashed
½ punnet cherry tomatoes halved
1 spring onion sliced
2 radishes sliced
1 tub sour cream
Recipe
1. Preheat the oven to a temperature of 180 degrees.
2. Afterward, heat up the oil in a pan over medium heat and sauté the onion, garlic, and chilli for a few minutes. Proceed to incorporate the spices and toast them for about one minute or until they emit a delightful aroma.
4. Introduce the beef mince and cook until it turns brown, then season it with salt and pepper.
5. Next, add the tomato paste, fresh oregano, and kidney beans. Allow this mixture to cook for approximately 5 minutes before turning off the heat.
6. In an oven-safe dish or tray, create a base layer using a thin coating of tortilla chips, followed by a layer of the beef mixture and cheese. Repeat these steps to form a second layer, and then place the dish in the oven for 5 minutes or until the cheese has melted.
7. Retrieve the dish from the oven and arrange the spring onion, avocado, radish, tomatoes, and sour cream on top.
