One-Pan Sausage Ratatouille Recipe
Our One-Pan Sausage Ratatouille Easy Meal is the perfect way to load up on flavoursome veggies, whilst keeping the dishes to a minimum! Enjoy it on its own, or serve with quinoa, rice, couscous, potatoes or crusty bread for an even heartier meal. Got extra veggies that need using? Throw them in too!
Ingredients
- 500g pork sausages
- 1 brown onion
- 2 carrots
- 1 red capsicum
- 1 courgette
- 200g cherry tomatoes
- 2 x 400g cans Mexican Style Tomatoes
- 1 tbsp olive oil
- ½ cup green olives, optional
- Salt and pepper
Instructions
- Brown the sausages: Heat the olive oil in a large, deep frying pan or casserole dish over medium-high heat. Add the sausages and cook for 5-7 minutes, turning regularly, until browned all over. They don't need to be cooked through at this stage. Remove from the pan and set aside to cool slightly.
- Cook the vegetables: Add the onion and carrot to the same pan and cook for 3-4 minutes. Add the capsicum and courgette and cook for another 5 minutes, stirring occasionally, until they begin to soften.
- Add the tomatoes: Add the cherry tomatoes and cook for 2-3 minutes until they begin to soften. Pour in the Mexican Style Tomatoes and stir to combine.
- Add the sausages: Slice the sausages into roughly 2-3cm pieces and return them to the pan. Stir everything together and bring to a gentle simmer.
- Simmer: Reduce the heat and simmer partially covered for 20-25 minutes, stirring occasionally, until the vegetables are tender and the sausages are completely cooked through. If using olives, stir them through for the final 5 minutes.
- If you'd like a thicker sauce, remove the lid for the final 5-10 minutes and allow it to reduce.
