Ingredients
- 500g 95% lean beef mince
- 1 pack Farrah's Tortillas (at least 4 large tortillas)
- 1 sachet Old El Paso Burrito Seasoning
- 1 pack Ben's Mexican Style Rice
- 1 brown onion, finely diced
- 1 can Wattie's Mild Chilli Beans
- 150–200g Mainland Cheese, grated (from the 250g pack
- 1 tbsp cooking oil
- Water, as directed on the seasoning packet
Instructions
- Prepare your ingredients - Finely dice the brown onion and grate the Mainland cheese. Set aside your tortillas and remaining ingredients so everything is ready to go.
- Cook the beef and onion - Heat the oil in a large frying pan over medium-high heat. Add the diced onion and cook for 2–3 minutes until softened. Add the beef mince and cook for 5–7 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
- Add the Mexican flavours - Sprinkle over the Old El Paso Burrito Seasoning and add the water specified on the packet. Stir well to coat the mince, then add the Wattie's Mild Chilli Beans. Simmer for 4–5 minutes, stirring occasionally, until the mixture is thick, saucy and heated through.
- Prepare the rice - Heat the Ben's Mexican Style Rice according to the packet instructions. Fluff with a fork and set aside, ready for assembling your burritos.
- Warm the tortillas - Gently warm the Farrah's tortillas in a dry frying pan or microwave according to the packet instructions. This makes them softer and easier to fold without tearing.
- Load them up! - Spoon some Mexican-style rice into the centre of each tortilla, followed by a generous helping of the beef and bean mixture. Sprinkle over the grated Mainland cheese. Be careful not to overfill, as you'll need room to fold them.
- Fold, toast and enjoy! - Fold the sides of each tortilla inwards, then roll tightly from the bottom to form a burrito. Place seam-side down in a warm, dry frying pan and toast for 1–2 minutes on each side until lightly golden, the filling is piping hot and the cheese has melted. Serve warm and enjoy!
