Curried Sausages Recipe

Curried sausages are one of New Zealand's most iconic comfort foods — warm, hearty, and deeply satisfying.

Ingredients

  • 1x Beef Sausages
  • 1x Barker's Curried Sausages Meal Sauce
  • 1x Agria Potatoes Box
  • 1x Carrot
  • 1x Brown Onion
  • 1x Wattie's Baby Peas 750g
  • 1x Fortune Basmati Rice 1kg

Instructions

  1. Step 1 — Cook the rice. Rinse 2 cups of Fortune Basmati Rice under cold water. Add to a saucepan with double the amount of water and a pinch of salt. Bring to the boil, reduce to low, cover and cook for 12 minutes. Remove from heat and leave the lid on to steam for 5 minutes.
  2. Step 2 — Brown the sausages. Heat a tablespoon of oil in a large saucepan or deep frying pan over medium-high heat. Add the beef sausages and cook for 4–5 minutes, turning regularly, until browned all over. They don't need to be fully cooked through at this stage as they'll finish in the sauce. Remove and slice into chunky rounds — about 3–4cm thick. Set aside.
  3. Step 3 — Soften the onion. In the same pan over medium heat, add the diced brown onion and cook for 4–5 minutes until soft and golden. The caramelised onion adds a natural sweetness that balances the curry sauce beautifully.
  4. Step 4 — Add the vegetables. Add the diced Agria potatoes and sliced carrot to the pan and stir through the onion. Cook for 2 minutes, stirring to coat in the pan juices.
  5. Step 5 — Add the sauce. Pour the Barker's Curried Sausages Meal Sauce over the vegetables and stir to combine. Add a splash of water if needed to ensure everything is just covered. Return the sliced sausages to the pan and stir through. Bring to a gentle simmer.
  6. Step 6 — Simmer until tender. Cook uncovered on a gentle simmer for 15 minutes, stirring occasionally, until the potatoes and carrots are completely tender and the sauce has thickened. The Agria potatoes will absorb the curry sauce and become beautifully flavoursome throughout.
  7. Step 7 — Add the peas. Stir through a cup of Wattie's Baby Peas in the last 2 minutes of cooking. They just need to heat through — don't overcook or they'll lose their vibrant green colour.
  8. Step 8 — Serve. Fluff the rice with a fork and divide between four bowls. Spoon the curried sausages generously over the top and serve immediately
