Method:
Set your BBQ or oven for low and slow cooking at around 130°C. If you're using a smoker or BBQ, applewood chunks are ideal for added flavour.
Cut the pork belly into 2.5 cm (1 inch) cubes. Rub with oil and your favourite BBQ seasoning or “man rub.”
Arrange the pork belly pieces on a baking tray and place them in the oven or smoker/BBQ. Cook for 2 hours at 130°C.
While the pork cooks, combine all the sauce ingredients in a saucepan and heat gently until the butter melts and everything is well mixed.
After the first 2 hours, remove the pork from the oven or BBQ. Cover tightly with foil and return to cook for another 1½ hours.
Uncover and cook for a final 30 minutes to allow the edges to caramelise. Remove from heat.
If the sauce is too thin, pour it into a saucepan and simmer until it reduces to a thick glaze.
Toss the pork belly bites in the sauce, serve, and get ready to demolish them!
