Method:
Cook the tomatoes and bell pepper:
Heat the oil in a large pan over medium-high heat. Add the bell pepper and cherry tomatoes, sautéing for 4 to 5 minutes until the tomatoes become blistered and saucy. Stir in the garlic and cook for another minute.
Add the spinach:
Add the spinach and the white parts of the green onion. The spinach will fill most of the pan at first but will quickly wilt down. Stir for 2 to 3 minutes, until fully wilted. Transfer the cooked vegetables to a plate and set aside.
Cook the beef:
In the same pan, add the ground beef, oregano, salt, and black pepper. Use a spatula to break up the meat as it cooks. Cook until the beef is browned, then drain any excess grease.
Garnish and serve:
Return the cooked vegetables to the pan, add the green parts of the green onion, and stir until everything is warmed through. Sprinkle with crumbled feta before serving.
