Ingredients
- 2-3 large pizza bases (or 4 small single size ones)
- Pepper and Me Sweet Bourbon St BBQ sauce
- 500g The Meat Box skinless, boneless chicken thighs
- 250g The Meat Box Streaky Bacon
- 1 cup sliced mushrooms
- ½ sliced red capsicum
- 1 cup baby spinach leaves
- ½ thinly sliced red onion
- 1 cup grated pizza cheese
- 1 Tbsp olive oil
- Salt/pepper
1.Preheat your oven to 180 degrees.
2. Get a large oven tray and lay your strips of bacon on one half of the tray, then on the other side of the tray place your chicken breast and drizzle with olive oil, salt and pepper.
3. Place into the oven, after 10 minutes turn your bacon and leave for a further 10 minutes then remove the bacon. Keep the chicken in for 10 more minutes (30 minutes total for the chicken) while your prepare your toppings.
4. Get your pizza base and spread evenly over your bbq sauce, then top with spinach leaves, sliced mushrooms, onion and capsicum.
5. Get your cooked chicken breast and shred it apart into chunks using two forks and then slice your bacon.
6. Add this on top of your pizza, sprinkle with cheese then into the oven for 15 minutes or until cheese is melted and veggies are cooked.
Drizzle over some more bbq sauce before serving
